Chicken Pasta Salad
Take a chicken breast (cooked either grilled, poached (i.e. boiled) or sauteed) cut into little bite size pieces.
Take your favorite veggies (I use a pepper (green or red for color; a couple of celery sticks, some cucumber (scoop out the seeds), a tomato (scoop out the seeds) all cut into bite-size pieces.
Boil some pasta (shells, macaroni, rotini anything that's not spaghetti style) Cool with running cold water over it.
Mix chicken, veggies and pasta together. Add more or less meat/veggies until it's the mix that you like.
In a separate bowl mix mayonnaise and sour cream in equal quantities. I spice mine up with dill weed and a spice mix called Tony Chachere's -- but use whatever spices you like. Go slow and mix and taste and add and mix and taste until the "sauce" tastes right. Then add a little at a time to the pasta mixture and stir it in and add and stir and taste until the consistency is what you like.
