Fastest Beef Stroganoff

Precooked Frozen meatballs (about 25)
Can of beef broth
1 C sour cream
1 med chopped onion
1 sm can mushrooms
1 T ketchup
1 clove garlic, chopped
Cooked egg noodles

Boil beef broth with onion, mushrooms and garlic. Add meatballs and ketchup. When meatballs are heated through, remove from heat and add sour cream. If sauce is too thin, thicken with a little cornstarch or flour. Toss with cooked egg noodles.


Quick and Easy Mexican Chicken

1 lb. boneless skinless chicken breasts
2 C broken up tortilla chips
1 pkg. taco seasoning
Sour Cream

Mix tortilla chips with seasoning in a bag (like shake 'n bake) and toss dampened chicken in mixture. Bake at 350 for about 35 minutes or until juices run clear. Serve with sour cream (and salsa and cheese if you want)

2 C cooked rice (I used minute rice)
1 C salsa
1 can corn
1/2 C monterey jack cheese

Mix cooked rice, salsa and corn. Heat through and sprinkle with monterey jack cheese. Serve with chicken
