Baked Oregano Chicken

1/4 c. dry bread crumbs
2 Tbsp. Parmesan cheese (dry or fresh)
1/4 tsp. Oregano
1/8 tsp. garlic salt
1/8 tsp.pepper
1/4. c. dijon mustard
4 Chicken breasts (bone-in or boneless)

Heat oven to 350. Spray broiler rack with Pam.

Mix bread, cheese and spices in small bowl.

Spread mustard on chicken, coating all sides. Coat with bread mix.

Bake uncovered 1 1/4 hours (shorter if boneless breasts)


Pacific Salmon Loaf

1 16 oz can salmon, drained, flaked
1/2 c dry bread crumbs
1/2 c. lite mayo
1/2 c. chopped onion (I use dried minced)
1/4 c. chopped celery
1/4 c. chopped green pepper
1 egg, beaten
1 tsp salt

Combine all ingredients and mix lightly. Shape into loaf in shallow baking dish. Bake at 350 for 40 minutes

Serve with Cucumber sauce

Combine and mix well:
1/2 c. lite mayo
1/2 c. lite sour cream
1/2 c. finely chopped cucmber
2 Tbsp. chopped onion (again, I use dried minced)
1/2 sp. dill


Fillets in Sour Cream

4 tsp butter or margarine, divided
2 lbs. fish fillets
1 tsp. salt
1/2 tsp. Tabasco pepper sauce
1 Tbsp. Parika
1/4 c. grated parmesan cheese
1 c. (8oz) Sour Cream
1/4 c. dry bread crumbs

Grease 2 qt baking dish with 1 tsp. of the butter. Arrange fish in dish. Blend salt, Tabasco, paprika and Parmesan cheese into sour cream. Spread over fish. Top with bread crumbs and dot with remaining butter. Bake, uncovered, in 350 oven 30 minutes until fish flakes easily with a fork. Serve with lemon slices if desired.
