Malaysian Vegetable Curry

1.5C red lentils
1 thick slice ginger
3 garlic cloves, halved
1 fresh green chilli, quartered
1/2 t salt
1 t oil/butter
1/2 t ground turmeric
500g mixed veg, such as baby new potatoes, golden squash (button squash?),
green and yellow beans, eggplant and carrot, cut into chunky pieces
Juice of one lime
1T oil
1 t brown mustard seed
1 dried red chilli broken up
1/2 red or brown onion, finely chopped
1/4 C thick coconut milk (optional)

Rinse lentils. Put into saucepan wiht ginger, garlic, green chilli, salt, oil and turmeric, with enough water to cover. Simmer gently until lentils are soft. Add vegetables and cook until soft, adding more water if necessary. Add lime juice. Heat extra oil in frying pan and gently fry mustard seed, red chili and onions for 2-3 minutes, then add to lentils and vegetables. Stir in coconut milk and cook for a further minute.

Serves 4


Impossible Pie (sweet)

2 eggs
100g (3.5oz) sugar
32g (1oz) plain (all-purpose) flour
60g (2oz) butter
240ml (8 oz) milk
100g (3.5oz) coconut

blend all ingredients in blender for several minutes. Pour into 18cm (6 inch?) greased microwave pie plate and microwave on MEDIUM for 10 minutes. Move the dish to the other side of turntable halfway through. Dust top with cinnamon and stand 5 minutes.


Impossible Pie (savoury)

3/4C pastry mix (packet)
3 eggs
1.5 C milk
1/2 C bacon, chopped
1 onion, chopped
1/2 C grated cheese

Mix, pour into greased pie dish. Cook 3/4 hour, 325F


Chilli Bean Casserole

400g (14oz?) can chick peas (garbanzos), drained
2x 400g cans haricot beans, drained
1x 400g can sweet corn, drained
1x400g can tomatoes, drained
salt and pepper
2T olive oil
1 onion, chopped
1/2T cumin
1/2T chilli powder
1 red capsicum (bell pepper?), seeded cut into chunks
1/2C browned breadcrumbs

Mix chick peas, beans, corn, tomato. Season with salt and pepper. In a frying pan, heat oil, gently saute onion, cumin, chilli and capsicum until softened (5-8 minutes). Add to bean mix. Turn into greased casserole dissh, sprinkle breadcrumbs over, cook in preheated moderate (180C/350F) for 45 minutes. [I skip this step].

Serves 4-6
