Teriyaki Marinade

1/2 C Soy sauce
1/2 C Water
2 T Lemon juice
1 T Brown sugar
2 T Salad oil
1/4 tsp tabasco sauce
1/4 tsp garlic powder or
2 cloves crushed garlic
1/4 tsp pepper

Stir. Add beef/pork/chicken. Marinade two hours or more; turn meat halfway through.


Taco Dip

One can of refried beans
A thin layer of sour cream
A jar of salsa; the thicker the better - PACE thick and chunky works well
Finely chopped up lettuce
Cheddar cheese

Layer ingredients in order listed.


American Shepherd's Pie

Brown 1 lb of ground beef with 1 onion chopped in saute pan. Add salt and pepper to taste. Drain fat and put meat on bottom layer of a deep casserole dish.
Heat up 1 can of peas and 1 can of corn (I thrown them in the same pan). Strain liquids from vegetables and add these veggies as next layer of casserole.
Make mashed potatoes the way you normally do ( I use about 5-6 medium sized potatoes,butter, milk, salt and pepper and whip with mixer) and then spoon over the veggie layer of the casserole.
Then heat casserole for about 30 minutes in 350 oven. I have gotten so fast at making this recipe that I now make all the ingredients at the same time and put it together quickly so I dont have to heat the casserole in the oven.


Sloppy Joes

Just toss in some of the following:
1 lb browned ground beef
1 Can chicken gumbo soup
Big squirt of ketchup
Small squirt of mustard
Little bit of Worchestershire Sauce
Sprinkle of chili powder

If you use two pounds of ground beef you can use a can of tomato soup too but I try to minimize the tomato so just use a bit of ketchup.


Minestrone Soup

1 C Primo Tubetti (small tube shaped pasta)
2 T olive oil
1/2 pound sausage (I use Jimmy Dean's Regular flavor - mmmmm)
1 large onion chopped
1 clove minced garlic
1/2 C chopped celery
1/2 C chopped carrot
1/2 C chopped green pepper
2 T parsley
1/2 tsp dried basil
1/4 tsp dried thyme
1 bay leaf
1 tsp salt
2 cups chopped whole tomatoes
4 C chicken broth
2 C shredded cabbage
1 can [19 oz] red kidney beans
grated parmesan cheese
1/4 tsp pepper

In large saucepan heat oil. Brown sausage, onion, garlic, celery, carrot and green pepper. Drain fat if necessary. Stir in remaining ingredients except beans, pasta and cheese. Simmer for 10 minutes. Stir in red kidney beans and pasta. Simmer for 10 minutes longer. Add more broth if soup becomes too thick. Serve with grated parmesan cheese.


Chicken Lorraine


7-8 chicken breasts skinned and boned
sliced provelone cheese
1 can cream of chicken soup
1/2 cup water
Pepperidge Farm herb stuffing mix
1 stick butter

Lay chicken on bottom of large baking dish. Lay slices of cheese on top of chicken. Mix soup and water. Pour over cheese and chicken. Sprinkle stuffing mix on top (to cover everything). Melt butter and pour on top. Bake at 350 degrees for approx 1 hour - covered. If you want to double the recipe double layer everything and bake at 375 degrees for 1 hour 20 mins.


Red Beans and Rice

2 tsp Veg Oil
1 1/2 C chopped onion
3 cloves minced garlic
1/2 C diced green bell pepper
1 C Tomato
2 tsp Chili Powder
1 can red beans
2 C cooked rice
4 oz grated monterey jack cheese

In large skillet heat oil over med heat. Add onions and garlic: saute 8 to 10 min. Add green bell pepper: saute 3 min. Stir in tomatoes and chili powder. Bring to a boil. In 2 quart casserole combine beans and rice. Pour in tomato mixture. Stir to combine. Sprinkle cheese over top. Bake in 350 degree oven for 10 to 15 min or until hot and bubbly.


Cheater Soup

2 cans of Bean with Bacon soup
1-2 stalks celery
2-3 carrots
4-5 potatoes
sausages if desired
6 cans of water

Chop up the veggies into bite sized pieces, slice the sausages, and add everything in a big soup pan.


Quiche Italiano

2 C sliced pepperoni
2 bell peppers, chopped
1 onion, chopped
2 C chopped mushrooms
2 C grated Mozzarella
2 Qts whipping cream
2 tsp salt
2 tsp white pepper
1 tsp oregano
2 tsp basil
30 eggs, beaten slightly
2 tomatoes, cut in wedges

Chop and mix all ingredients except eggs and tomatoes.
Fill 5 quiche pans. Pour eggs over. Garnish with tomato wedges.
Bake at 350F oven for 40 minutes.
Yields 5 quiches!


Fruit and Cream Layered Salad

Topping:
3 oz pkg cream cheese, softened
8 oz strawberry yogurt
1 T sugar
2 tsp lemon juice
2 C whipped cream
1/4 tsp almond extract

Salad: (use any fruit you wish)
2 C fresh blueberries
3 peaches, peeled and sliced
2 C strawberries, halved
2 C green grapes
20 oz can mandarin oranges, drained

Combine first four ingredients. Beat at medium speed until smooth. Add whipping cream and almond extract; beat until smooth and thick. Refrigerate

Layer fruit until bowl is half full. Spread half of topping, then more fruit and rest of topping. Top with 2 T toasted slivered almonds.


Beef Stroganoff

3 lb family steak (round)
2 Cans cream of mushroom soup
1 can mushrooms (I use fresh)
1 pkg onion soup
2 tsp worchestershire sauce
1 pint sour cream; room temp to prevent curdling Mix together. Roast 5 hours at 250F. Add sour cream 1/2 hour before serving. Serve over hot noodles, rice, or wild rice.


Mexican Layers

One can refried beans on the bottom
Thin layer of sour cream
Layer of salsa (the thicker the better)
Layer of lettuce; finely chopped
Layer of shredded cheese


Cowboy Cookies

1 Cup White Sugar
1 Cup Brown Sugar
1 Cup Shortening
2 Cups Flour
1 Cup Nuts (we use cashew, can use peanuts too)
2 Eggs
1 tsp Vanilla
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 Cup Oatmeal
1 Cup Wheaties

Drop by spoons. Bake at 350F. Baking time varies depending on size of cookies; 15-25 minutes.


Cinnamon Sugar Cookies

1 C butter or margarine, softened
1 C sugar
1 C confectioners sugar
1 C vegetable oil
2 eggs
1 tsp vanilla extract
4 1/3 C flour
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1 tsp cream of tartar
1 c finely chopped pecans, optional
colored sugar, optional

In a large mixing bowl cream the butter, sugars, and oil. Add eggs and vanilla; mix well. Add flour, salt, baking soda, cinnamon and cream of tartar. Stir in the pecans if desired. Roll into 1" balls. Place on greased cookie sheets; flatten with bottom of a glass dipped in sugar. Sprinkle with colored sugar if desired. Bake at 375F for 10-12 minutes. Yield: approximately 8 dozen.
